Fermentation auxiliary compound of PVPP high purity bentonite and cellulose. Does not contain casein ( Allergen Free product).
Paradoxe AF is a clarifier composed by micronized potassium caseinate, bentonite and activated celluloses with high adsorbing power. It combined in just one preparation the positive characteristics of three active principles that, when used on musts and wines, induce the full expression of the characteristics possessed by the cultivars used for vinification.
Thanks to the activity of the proteic fraction, Paradoxe AF partially adsorbs proanthocyanidins and catechins, protecting the product from oxidation risks; in this way noble greenish hues emerge in the case of white wines and more defined pink hues in the case of rosé wines.
During fermentation, Paradoxe AF has the effect of supporting and distributing yeasts into the mass thanks to the activated celluloses, paying a double role: it facilitates the work of the selected microorganisms and adsorbs harmful metabolic products, such as long chained fatty acids and their ethylic esters, avoiding the risk of slowing down or stuck fermentations.
The electro-negative components present in Paradoxe AF bind with thermo-labile proteins, preserving wine from the proteic casse and avoiding further interventions that may compromise the sensorial outline.
During refermentations and the “prise de mousse” in pressure tanks, Paradoxe AF facilitates the complete breakdown of sugars and confers organoleptic fullness to sparkling wines, giving them body, structure and aroma.
